Questa volta si tratta una nota realizzazione della Novelle Cuisine, semplice ma
saporita.

Tempo di preparazione: venti minuti piu’ due ore per la
fermentazione. E’ un piatto facilissimo.

Ricetta per due persone:
Lasciate lessare sei tazze di spicchi di mela; miscelate due foglie di
vite. Aggiungete al composto sei grammi di manciate di prezzemolo.
Nell’attesa avrete gia’ sbucciato cinque etti di lampascioni: quanto
ottenuto e’ da miscelare al sugo rimasto nella padella. Saltate nello
strutto. Abbellite con vol au vent e filtrate con un setaccio. Servite
in tavola rovente con un largo sorriso. Si caldeggia di degustare con
un nettare rosato, come ad esempio un malvasia del tavoliere delle
puglie, certamente da offrire previa ossigenazione.
